We have attempted to replicate Gose by adding salt to the brewing water; souring over an extended period in the kettle with unmilled grain; adding coriander and Kaffir lime to the kettle and using a neutral yeast. The result is a beer that smells like a margarita cocktail … a little salty, definitely sour with a soft wheat malt finish. Winner of a Bronze Medal at 2019 Australian IBA Awards

OATMEAL STOUT

A dark black beer with a thick coffee-coloured head. Early aroma of coffee, giving way to a very rich chocolate flavour with a burst of orange on the end. Features local spray-free oranges and organic cacao.

Named after the beautiful woman of Hawaiian history, who kicked arse as a surf-rider. Kelea is said to have beaten the chiefs with her grace, daring and skill on a surf board. This Australian-Style Pale Ale aims to do the same.

This liquid gold pale ale features gooseberry and citrus notes on a soft sweet malt finish.  At 4.8%, it is an easy drinking Pale Ale with enough hops to give the beer character and malt to balance it perfectly. 

BELGIAN TRIPEL

This liquor-style beer is a warm golden colour with flavours of smooth caramel. OATMEAL STOUT

This is another collaboration with Josh of Sundays Coffee Co, who supplied us with lightly roasted Ethiopian Chiri beans for this lovely drop. The coffee cherries are grown and hand picked by 650 families high in the Sidama coffee growing region. We put the roasted beans directly in the brew to create this sweet coffee and cream stout

An amped up version of our regular Kero Tin Ginger Beer with spices of Cinnamon, cloves and lemon peel added. The higher ABV lends a drier spicier note to this one-off ginger beer.

A Fruity XPA using Seven different hops and Lallemand’s very new yeast – Voss Kveik Ale Yeast – a very quick, clean yeast from Norway which operates best at higher temperatures and allowed us to finish this beer in ONE WEEK! PALE ALE

A very light hoppy pale ale designed by Daryle to honour all women in brewing using 100% Pink Boots Blend hops. Pink Boots Society is a global organisation dedicated to women working in the brewing profession and every year they team up with USA hop growers, Yakima Chief Hops to create a “Pink Boots Blend”. The 2020 blend includes Azacca, El Dorado, Idaho Gem and Loral to create a blend with tropical, citrus and piney aromatic qualities. Our Middy has distinct pineapple, passionfruit and sweet fruit aromas and a nice bready malt finish. Very tasty and very sessionable. 

DOUBLE INDIA PALE ALE

A BIG BAD BOY …. originally Craig was going to call this Bug Killer, but after driving him home after several “tasting” sessions from the uni-tank, it has been renamed “Corruption”. Overdosed on Mosaic, Galaxy and Citra hops, this beer is full of fruity hop aroma and flavour and enough crystal malt to disguise the high ABV

A thick dark porter infused with roasted coffee beans and cinnamon quills to create a rich dark beer. Using Papua New Guinea Sign Orgin beans from Flying West Coffee Roasters in Doonan.

Using half the wort from our Dark Porter brew, we have double-hopped this one up with Styrian Fox hops from Slovenia.   The reult is an hoppy dark beer with notes of blackberry and red current….. Rich and delicious winter drop

NEW ENGLAND IPA

OK, It’s official the brewer has gone crazy!  No bittering hops and a 3-hour whirlpool???  and  then that crazy Norwegian Kveik (Quick) yeast and loads MORE HOPS.  The result is an incredibly juicy, hazy NEIPA, full of flavour and taste ….  well it tastes like full crushed pineapple juice

KETTLE-SOURED GOSE

Orange & Passionfruit Gose Following our Kaffir Lime Gose brewing technique of adding salt to brewing water; souring over an extended period in the kettle with unmilled grain; adding coriander, oranges, passionfruit and orange peel to the kettle and using a neutral yeast.  The result is a tart orange flavour, a touch of passionfruit and a slightly sweet lift at the end 

CREAM STOUT

5.5% ABV /<10 IBU

This idea and recipe came from our apprentice Brewer, Emilee Dell-Wallace.  Emilee spent some time in the kitchen playing with marshmallows and how best to extract their flavour into a beer. The result – a stick mess, but worth the effort. This recipe includes organic cacoa nibs, vanilla beans, real marshmallows and lactose and the result is a creamy chocolate black beer, with just a hint of vanilla and marshmallow, and no bitterness. A Czech-style Pale Lager is a re-take on Maroochy Gold.  It is a lite easy drinking lager, refreshingly dry with a soft malt finish.  Brewed over 8 weeks – it is well worth the wait

This is just a small batch labour of Love – what you do when you can’t go to Europe and enjoy the real thing ….  it involved a good couple of hours in the kitchen making Belgian Candy and then a long drawn-out brew process on the pilot plant.  Currently in conditioning …. watch this space

Soured with Lallemand’s Philly Sour yeast, we have added Blueberries, Cranberries and Red Currants in the mix to extend the character of this sour

PALE ALE

Having sourced two kilos of fresh Centennial Hop Cones direct from Brisbane growers – Hilltop Hops, we wanted to create a clean, no-fuss pale ale to showcase the fresh hop flavour.  This was our first time brewing with fresh flowers, so we have added the cones in the whirlpool stage to extract maximum aromas, with no other late hop additions. The result is a light fresh peach pale with a very slight smokiness from it’s brew-day predecessor – Islay Tea

AMERICAN BROWN ALE

4.6% ABV /22 IBU

This nutty brown ale owes it’s existence to local avid homebrewer, Benny.  We upscaled his recipe and Benny joined us to brew a big batch. The result is a delicious ale with forward fruit character of Mosaic, Amarillo & Lemondrop hops and a dry hazelnut finish from the very distinctive “Go Nutty” malted oats.

Brewed by a guest brewer on our new pilot kit, this is a very limited release brew. Featuring Eclipse, El Dorado and Mosaic hops, this delicious session ale is perfect to welcome spring

A revamp of our first fresh hop attempt, this time we doubled the Fresh Centennial Hop Cones collected from the 31 May harvest from Brisbane growers – Hilltop Hops.  Our goal to create a clean, no-fuss pale ale to showcase the fresh hop character. This is our second time brewing with fresh flowers, so we added 4kg of cones in the whirlpool stage to extract maximum aromas and added another kilo in the ferment. The result is a light fresh peach pale

HARD SODA

This VERY limited release Christmas celebration tastes far too good and has actually come about by a bit of a mistake –  We thought the bag of berries in the freezer was raspberries but discovered when it was upended into the cooking pot, it was actually dark sweet cherries. So, this hard soda boasts a blend of cherries and raspberries. It is gluten free

WET HOP PALE ALE

4.5% ABV /30 IBU

Delicious and enough dry finish to leave you wanting more

A Classic Australian lager brewed with Cluster and Super Pride hops, and the new Novalager yeast from Lallemand. The result is a thirst-quenching light gold lager with a smooth flavour and body, complemented by a mild bitterness and a trace of sweetness. Perfect at the end of a hard day’s labour

GINGER BEER

TRIPLE IPA

10.2 ABV /est 80 IBU

Day Drinkers Demise and Pink Grapefruit and Beetroot Triple IPA  This is an interesting one …. Brewed specifically for HellBound Bar 5^th Birthday, Davy brewed a big bad IPA and split the wort.  Half has been treated with a clean yeast to enhance the hop character in this west coast style IPA. The other half … well the mad scientist has been at work …. At one stage Davy had half a dozen bowls of different flavours (fruits and adjuncts) and he was blending, mixing, tasting, blending, mixing, tasting …. All to determine what might go well in the second ferment vessel with the Voss Kveik yeast.  The result….. believe it or not …. A blend of beetroot and pink grapefruit, and yes it is pink.

A salute to all kiwi ingredients including Nelson Sauvin, Pacifica and Riwaka hops, this west coast style IPA boast fresh fruit aromas and a nice dry bitterness typical of this beer style. Far too easy drinking for the ABV..

This small batch brew designed to provide a full flavoured beer without the alcohol and this Ale meets the mark on each account

VIENNA LAGER

A typical European-style lager with a good malt body and classic European yeast character

French Farmhouse Ale

This small batch brew exhibits all the spice of a typical Farmhouse Ale, but enough sweetness to soften the finish

A take on the Blue Sky IPA switching up the hops and yeast

After enjoying so many good Pilsners in Europe, Craig set to work to brew a European-style Pilsner, with a multi-step mash, Hallatau Hops and a very long tank-lagering. There has been a lot of sampling from the tank on this one
