This recipe includes organic cacoa nibs, vanilla beans, real marshmallows and lactose and the result is a creamy chocolate black beer, with just a hint of vanilla and marshmallow, and no bitterness. The result is a light fresh peach pale with a very slight smokiness from it’s brew-day predecessor – Islay Tea

Our brewer mate, Hayden Mokaraka took over the brewkit to brew this malt/yeast driven style of German origin – A Gustrower Kniesenack, using smoked malt, rye, carafe and bohemian floor-malted pilsner malt and Kolsch yeast. Our goal – to create a clean, no-fuss pale ale to showcase the fresh hop flavour. This was our third time brewing with fresh flowers, so we added 6kg of cones in the whirlpool stage to extract maximum aronmas, and added more of the same hops in the dry hopping. The result is a light ale with aroma and flavours of fresh summer stone fruit. Delicious and enough dry finish to leave you wanting more

Day Drinkers Demise and Pink Grapefruit and Beetroot Triple IPA This is an interesting one …. Brewed specifically for HellBound Bar 5th Birthday, Davy brewed a big bad IPA and split the wort. Half has been treated with a clean yeast to enhance the hop character in this west coast style IPA. The other half … well the mad scientist has been at work …. At one stage Davy had half a dozen bowls of different flavours (fruits and adjuncts) and he was blending, mixing, tasting, blending, mixing, tasting …. All to determine what might go well in the second ferment vessel with the Voss Kveik yeast. The result….. believe it or not …. A blend of beetroot and pink grapefruit, and yes it is pink.

Taking the base recipe for our ever popular Kaffir Lime Gosé, we have used local spray-free Tahitian Limes with the fruit in the mash and added zest at whirlpool. Then we have added 15kg of local pineapple juice late in the ferment. The result is a golden ale with a white fluffy head, definitely salty and just a hint of sour lime on the first palate but a soft interesting finish.

Inspired by a brew brought in by local home brewer, Wayne Gilmour, we got Wayne and mate, Phil in for a brew day. It meant milling a big grain bill with some super specialty malts. From brew we split the wort across two ferment vessels – one with added lactose and custrad pie flavouring (desert in a glass) and the other we let the malts shine through. the result is two very different beers – one perfect for desert and the other perfect with fresh natural oysters.
