Take a classic English Porter recipe, add some lactose for residual sweetness and creamy mouthfeel, and Chai spice powder from Sunshine Coast Roastery, and you have a beer version of a Chai Latte.  This came about after enjoying a dirty chai coffee from Jaz at Shark Bait Coffee – next thing we were mixing chai powder with the oatmeal stout and the idea of a new recipe was born

A new take on an old recipe – this is the first time Craig has been excited about Ginger Beer for years.   It is still made from gluten free ingredients, although it is made on equipment subjected to gluten, including Sorghum malt and he has significantly upped the dose of fresh ginger, sourced and grown locally.   Try it with a piece of locally-grown lime to cut through any sweetness

This is gluten free, however, it is made on equipment exposed to gluten, with 45 kg of Australian Blackberry puree

Inspired by a brew brought in from local homebrewer, Wayne Gilmour, we got Wayne and mate Phil in for a brew day. It meant milling a big grain bill with some super specialty malts. From brew we split the wort across two vessels – one with added lactose and custard pie flavouring (desert in a glass) and the other we let the malts shine through. The result is two very different beers – one perfect for desert and the other perfect with fresh natural oysters

Craig wanted a simple no-fuss stout for winter – one with lots of body, not too high in ABV but very easy drinking  and that is exactly what he has achieved – a tasty number with 15% oats

Developed to showcase a very new hop – “Superdelic”  this beer features Lager Light Malt from the Canterbury Plains of New Zealand and the new Kiwi hop – Superdelic. It is very light in colour and exhibits aromas of candy and some say bubblegum from the hops

A light clean pale ale with 2024 new season wet hops. This time with new season Fresh Centennial, Columbus & Cascade Hop Cones direct from Brisbane growers, Hilltop Hops.  Our goal – to create a clean, no-fuss pale ale to showcase the fresh hop flavour.  This is our third season brewing with fresh flowers, so we added 6kg of cones in the whirlpool stage to extract maximum aromas. The result is a light ale with subtle fruit aroma and flavours – a very easy drinking session ale.

Our canning superstar, Hayden has been at work on the pilot brew kit again to create another very low alcohol beer.  This time a dark beer with plenty of flavour but almost no alcohol.

After enjoying so many good Pilsners in Europe, Craig set to work to brew a European-style Pilsner, with a multi-step mash, Hallatau Hops and a very long tank-lagering. There has been a lot of sampling from the tank on this one. Silver Medal 2024 Royal Qld Beer Awards.

This small batch brew exhibits all the spice of a typical Farmhouse Ale, but enough sweetness to soften the finish.

A salute to all kiwi ingredients including Nelson Sauvin, Pacifica and Riwaka hops, this west coast style IPA boast fresh fruit aromas and a nice dry bitterness typical of this beer style. Far too easy drinking for the ABV..

We got home from Europe to discover Davy has brewed us a German Hefeweizen, and Wow! One sip has put us back on holiday! A truly wonderful example of a German Wheat Beer.

A revamp of our 2022 fresh hop beer.  This time with new season Fresh Cascade and Columbus Hop Cones direct from Brisbane growers, Hilltop Hops. Our goal – to create a clean, no-fuss pale ale to showcase the fresh hop flavour.  This was our fourth time brewing with fresh flowers, so we have added 6kg of cones in the whirlpool stage to extract maximum aromas, and added more of the same hops in the dry hopping. The result is a golden ale with aroma and flavours of fresh summer stone fruit. Delicious and enough dry finish to leave you wanting more.

Brewer Davy has been working on a few variations of this classic English Real Ale and some of our English clientele reckon he has nailed it with this one.  This one combines a rich amber malt character with a refreshing bitterness.

What do you do with bags of peeled half limes, masses of frozen lime juice and an excess of lime marmalade?  Well, we put it all in a pot and cooked it up to create a limeade hard soda.  Think lemon, lime and bitters without the bitters.

A Classic Australian lager brewed with Cluster and Super Pride hops, and the new Novalager yeast from Lallemand. The result is a thirst-quenching light gold lager with a smooth flavour and body, complemented by a mild bitterness and a trace of sweetness. Perfect at the end of a hard day’s labour.

A very small batch pale done on Voss Kveik yeast with a good dosing of local mango puree and complimentary hops.

Hayden Mokaraka took over the brewkit to brew this malt/yeast driven style of German origin – A Gustrower Kniesenack, using smoked malt, rye, carafe and bohemian floor-malted pilsner malt and Kolsch yeast.  A dark beer with complex smokey maltiness. Silver Medal winner at Royal Qld Beer Awards 2023.

A small batch featuring all kiwi hops – Motueka, Pacifica and Riwaka and brewed with Lallemand’s new lager yeast – Novalager. The result is a light lemon aspen character with enough bitterness to make it sessionable.

This VERY limited release beer is made with 10 dozen Christmas Mince Pies Soaked in 5 bottles of Brandy – so a  VERY boozy number with definite fruit and pastry characters.

Originally brewed by Davy as a guest brewer on our new pilot kit as a limited release brew. It has now become one of our core range, featuring Eclipse, El Dorado and Mosaic hops finished on Voss Kveik yeast to give a delicious juicy throwback.

This version still delivers a thick dark porter but this time infused with Bramling Cross hops from the UK (We couldn’t source Styrian Fox hops this season). The result is still an hoppy dark beer with notes of blackberry …. Rich and delicious.

This nutty brown ale owes it’s existence to local avid homebrewer, Benny.  We upscaled his recipe and Benny joined us to brew a big batch. The result is a delicious ale with forward fruit character of Mosaic, Amarillo & Lemondrop hops and a dry hazelnut finish from the very distinctive “Go Nutty” malted oats.

A light sessionable summer ale with a citrus finish.  Brewed specifically for Maroochy Swans Rugby Union Club.  Available on tap at the Clubhouse in Cotton Tree or in cans at the Brewery or the Club Rooms.  Note funds from the sale of each carton goes back to the Club to foster Rugby Union on the Coast.

Soured with Lallemande’s Philly Sour yeast, we have added Blueberries, Cranberries and Red Currants in the mix to extend the character of this sour.

Our Malt supplier has just developed a new Maize Malt, and what do you do with Maize malt ……. Build a nice easy drinking Mexican Lager to beat the summer heat!  And this does just That!  Bronze medal winner – Royal Qld Food & Wine Show Beer Awards 2022.

This is just a small batch labour of Love – what you do when you can’t go to Europe and enjoy the real thing ….  it involved a good couple of hours in the kitchen making Belgian Candy and then a long, drawn-out brew process on the pilot plant. 

A Czech-style pale lager refreshingly dry with a soft malt finish.  Brewed over 8 weeks, it is well worth the wait.

We have taken the malt bill of our award winning Debbie Session Ale  – the base DNA of any beer,  and then  changed the hop profile to use 100% Eclipse hops – a newly developed hop out of Tasmania. The result is a hoppy blonde with aromas of tangerine.   Bronze Medal winner Australian Independent Brewers Awards 2021.

Following our Kaffir Lime Gose brewing technique of adding salt to the brewing water; souring over an extended period in the kettle with unmilled grain; adding coriander and oranges, passionfruit and orange peel to the kettle and using a neutral yeast. The result is a tart orange flavour, a touch of passionfruit and a slightly sweet lift at the end.

It’s official the brewer has gone crazy!  No bittering hops and a 3-hour whirlpool???  And then that crazy Norwegian Kveik (Quick) yeast and MORE HOPS  The result is an incredibly juicy, hazy NEIPA; full of flavour and taste ….  Well it tastes like full crushed pineapple juice .  Silver Medal Royal Qld Beer Awards  2023.

Based on the Boots Middy we have created another very light hoppy pale ale and hopped it up even more with Pink Boots Blend plus Riwaka, Eureka and Pacifica hops. This Middy has distinct sweet fruit aromas and a nice bready malt finish.  Very tasty and very sessionable. Bronze medal winner – Royal Qld Food & Wine Show Beer Awards 2021.

While Daryle was creating a sensible midstrength, Craig has gone crazy and created a Big Bad IPA chocked full of hops – the usual suspects, Galaxy, Mosaic and Citra. It is a big IPA full of hop flavour and just enough crystal malt to balance the bitterness.  Originally named Bug Killer (mid COVID) and changed to Corruption after the Brewer had “sampled” direct from the unitank on more than 2 occasions and needed to be driven home…..

A juicy milkshake IPA loaded with creamy lactose and  infused with toasted coconut and local spray-free Mangos.

A Fruity XPA using Seven different hops and Lallemand’s very new yeast – Voss Kveik Ale Yeast – a very quick, clean yeast from Norway which operates best at higher temperatures and allowed us to finish this beer in ONE WEEK! A take on our regular Kero Tin Ginger Beer, but spiced up for the festive season with cinnamon, cloves and lemon peel.

This is another collaboration with Josh of Sundays Coffee Co, who supplied us with  lightly roasted Ethiopian Chiri beans for this lovely drop.  The coffee cherries are grown and hand picked by 650 families high in the Sidama coffee growing region.  We put the roasted beans directly in the brew to create this sweet coffee and cream stout.

This Version of the Pale India Ale features Mosaic as the Aroma hop, giving distinct passionfruit and grapefruit aromas and a rich flavour.
