This came about after enjoying a dirty chai coffee from Jaz at Shark Bait Coffee – next thing we were mixing chai powder with the oatmeal stout and the idea of a new recipe was born

OK, It’s official the brewer has gone crazy! No bittering hops and a 3-hour whirlpool??? and then that crazy Norwegian Kveik (Quick) yeast and loads MORE HOPS. The result is an incredibly juicy, hazy NEIPA, full of flavour and taste …. well it tastes like full crushed pineapple juice.

Designed by Emily and Daryle to be a full-flavoured Hazy XPA but only mid-strength alcohol. We conducted a rub-&-sniff test with different ratios of Eclipse and Simcoe hops to get public opinion on the ratio mix, and then made use of the new Gladfield malt – “Big O” Oats. The result is a very nicely balanced XPA – lots of flavour, aroma and good body. Silver Medal Royal Qld Beer Awards 2022 & 2023

While Daryle was creating a sensible midstrength, Craig has gone crazy and created a Big Bad IPA chocked full of hops – the usual suspects, Galaxy, Mosaic and Citra. It is a big IPA full of hop flavour and just enough crystal malt to balance the bitterness. Originally named Bug Killer (mid COVID) and changed to Corruption after the Brewer had “sampled” direct from the unitank on more than 2 occasions and needed to be driven home…..

It is still made from gluten free ingredients, although it is made on equipment subjected to gluten, including Sorghum malt and he has significantly upped the dose of fresh ginger, sourced and grown locally. CHOCOLATE RYE STOUT

Inspired by a brew brought in from local homebrewer, Wayne Gilmour, we got Wayne and mate Phil in for a brew day. It meant milling a big grain bill with some super specialty malts. From brew we split the wort across two vessels – one with added lactose and custard pie flavouring (desert in a glass) and the other we let the malts shine through. The result is two very different beers. This one is the straight untreated wort
