KETTLE SOURED KAFFIR LIME

We have attempted to replicate Gose by adding salt to the brewing water; souring over an extended period in the kettle with unmilled grain; adding coriander and Kaffir lime to the kettle and using a neutral yeast. The result is a beer that smells like a margarita cocktail … a little salty, definitely sour with a soft wheat malt finish. Winner of a Bronze Medal at 2019 Australian IBA Awards

This Pale Ale features Bachousia Citradora – lemon myrtle leaves fresh from Canecutters Rest Farmstay & Kitchen Garden at Rosemount – The same farm that takes our waste for animal food and compost – this is the cycle effect of recycling at it’s best!  

The fresh new lemon myrtle leaves lend a distinct aroma and fresh flavour to this light, clean beer

 

EASY SUNDAY COFFEE CARAMEL STOUT

This is another collaboration with Josh of Sundays Coffee Co, who supplied us with lightly roasted Ethiopian Chiri beans for this lovely drop. The coffee cherries are grown and hand picked by 650 families high in the Sidama coffee growing region. We put the roasted beans directly in the brew to create this sweet coffee and cream stout

KERO-TIN GINGER

A classic old-fashioned ginger beer made from a very old recipe from Craig’s Mum – dating back to the depression when it was made in a kerosene tin. This is brewed with locally grown and sourced ginger

ISLAY TEA

UK-style Brown Ale

4.7% ABV / 22 IBU

Reflects all the characteristics of the Manuka Smoked Malt, which forms the base of this beer and lends and aroma and flavour reminiscent of a fine Islay Whisky. Islay (pronouced Eye-la) is in the south of Scotland and is home of the famous peat smoky whiskies.
