DEBBIE'S COUSIN

BLONDE ALE

4.2% ABV 

We have taken the malt bill of our award winning Debbie Session Ale  – the base DNA of any beer,  and then  changed the hop profile to use 100% Eclipse hops – a newly developed hop out of Tasmania. The result is a hoppy blonde with aromas of tangerine

 

SUMMER DAYZ

An easy drinking lager-like summer ale, featuring Enigma Hops 

KVEIK OR THE DEAD HAZY IPA

NEW ENGLAND HAZY IPA

6.2% ABV

Ok, it’s official – the brewer has gone crazy! No bittering hops and a 3-hour whirlpool???? And then that crazy Norwegian Kveik (Quick) yeast and MORE HOPS. The result is an incredibly juicy, hazy NEIPA; full of flavour and taste …. well it tastes like full crushed pineapple

MARZEN-STYLE

A malty sessionable beer – amber in colour reflecting all the European style malts and Tettnang hops.  Our replication of the historic Oktoberfiest  beers

SECRET SEVEN XPA

EXTRA PALE ALE

4.3 % ABV / 26 IBU 

A Fruity XPA using Seven different hops and Lallemand’s very new yeast – Voss Kveik Ale Yeast – a very quick, clean yeast from Norway which operates best at higher temperatures and allowed us to finish this beer in ONE WEEK! The finished product is crisp and fresh.

HOP THERAPY SERIES VI

PALE INDIA ALE

5.2% ABV / 28 IBU

  This Version of the Pale India Ale features Mosaic as the Aroma hop.  A full bodied flavourful Ale.  It’s predecessor, Hop Therapy IV won a Bronze medal at the 2019 Qld Royal Food & Wine Beer Awards  and again in 2021

KAFFIR LIME GOSE

KETTLE-SOURED GOSE

4% ABV / 20 IBU

We have attempted to replicate  a Gose from Northern Germany, by adding salt to the brewing water; souring over an extended period in the kettle with unmilled grain; adding coriander and Kaffir lime to the kettle and using a neutral yeast. The result is a beer that smells like a margarita cocktail … a little salty, definitely sour with a soft wheat malt finish. Winner of a Bronze Medal at 2019 Australian IBA Awards

 

NOOSA RUBY SUNSET ALE

RYE IPA

4.8% ABV / 67 IBU 

A rich red ale with aromas of chocolate cola, rich berry and stone fruits with a dry finish. Reasonable level of bitterness

Our malt supplier has just developed a new Maize malt and what do you do with Maize Malt…….. Build a nice easy drinking Mexican Lager to beat the summer heat! And this does just that!

Our classic Kero-tin Ginger Beer brewed with locally grown and sourced ginger.  Always a popular alternative

CHOCOLATE MARSHMALLOW STOUT

CREAM STOUT

5.5% ABV /<10 IBU 

This idea and recipe came from our apprentice Brewer, Emilee Dell-Wallace.  Emilee spent some time in the kitchen playing with marshmallows and how best to extract their flavour into a beer. The result – a stick mess, but worth the effort. This recipe includes organic cacoa nibs, vanilla beans, real marshmallows and lactose and the result is a creamy chocolate black beer, with just a hint of vanilla and marshmallow, and no bitterness

DOUBLE SUNSHINE RED IPA

RED IPA

7.2% ABV / 75 IBU 

A strong hop forward beer with aromas of sweet grapefruit and passionfruit layered on a strong malty backbone

ENDLESS DAZE

HAZY XPA

3.5% ABV /18 IBU

This is Emilee’s second commercial brew. designed to be a full-flavoured Hazy XPA but only mid-strength alcohol. Emilee conducted a rub-&-sniff test with different ratios of Eclipse and Simcoe hops to get public opinion on the ratio mix, and then made use of the new Gladfields malt – “Big O” Oats. The result is a very nicely balanced XPA – lots of flavour, aroma and good body
